The ingredients needed to make Kollu Podi:
  1. Take 1/2 cup horse gram
  2. Get 2 tbsp udad dal
  3. Make ready 6 dry red chillies
  4. Get 1/2 tsp black peppercorns
  5. Prepare 2 tbsp sesame seeds
  6. Get 4 garlic Cloves
  7. Take 10-12 curry leaves
  8. Make ready 1/2 teaspoon hing / asafoetida
  9. Prepare to taste Salt

Instructions to make Kollu Podi:
  1. In a pan, dry roast horse gram on medium heat until it starts crackling. Take out in a bowl and let it cool down.
  2. In the same pan, add udad daal, dry chillies and black peppercorns. Roast it on medium heat for 2 minutes. Add sesame seeds, garlic and curry leaves and roast for another 2 minutes. Let it cool down and mix it with the roasted horsegram. Add hing and salt to it. Grind everything in a mixer jar to a little bit coarse powder.
  3. Kollu Podi is ready to serve. When it is completely cold, store it in an airtight container.
