The ingredients needed to make Bitter gourd poriyal:
  1. Get 2 bitter gourd finely chopped and seeds removed
  2. Take 1 onion chopped
  3. Get 1 tomato chopped
  4. Take 2 tsp kulambu milagai thool (or 1 tsp red chilly powder and 1 tsp coriander powder)
  5. Get 1/4 cup grated coconut
  6. Get Salt as required
  7. Prepare 1 tbsp + 1 tbsp oil

Stir-frying makes the bitter gourd less bitter and more tastier. This yummy stir-fry goes well with any South Indian Main Courses. A poriyal that has a simple taste,one of my hubby's favorite. We mix this poriyal with hot rice and Snake gourd needs some preparation before cooking,which I always enjoy doing…Some veggies.

Instructions to make Bitter gourd poriyal:
  1. Heat a cast iron pan with 1 tbsp oil. Fry bitter gourd until it is half cooked. Keep aside.
  2. In the same pan, heat 1 tbsp oil. Temper with mustard seeds. Add onion and sauté until it becomes soft. Add tomato and sauté until it becomes soft and leaves oil. Add salt and spice powder and sauté until raw smell goes. Add bitter gourd and sauté until it is cooked completely. Finally add coconut, mix it together and switch off the flame.
