  1. Prepare 250 kg Brinjal
  2. Make ready 3 tablespoon Coriander seeds
  3. Make ready 1 tablespoon Cumin seeds
  4. Take 1 tablespoon black pepper powder
  5. Get 5 Small onion
  6. Take 1 tsp Tamarind
  7. Prepare 1/2 Teaspoon Turmeric powder
  8. Prepare 1 cup Coconut
  9. Get 4 tablespoon Oil
  10. Take to taste Salt
  11. Prepare 1 tsp Coriander leaves for garnishing

Instructions to make Kovai special brinjal pot kulambu:
  1. Cut the brinjal into 4 part without fully opened. The head part of brinjal is not fully cutted.
  2. Heat a pan add 1 tablespoon of oil. Add 3 tablespoons of coriander seed, 1 tablespoon cumin seed, 1 tablespoon of pepper, 4 red chillies, 10 small onion. Roast it in low flame.
  3. Cut the coconut into small pieces.
  4. Add the coconut with that roasted spice and grind it. Make a smooth paste.
  5. Heat the pot. Add 2 tablespoons of oil and heat it. Add brinjal and fry it till golden brown. Add tamarind water cook for 5 min.
  6. Add the fine paste into the pot. Add Salt, turmeric powder half spoon and salt as required.
  7. Cook for 5 mins. Garnish the kulambu with coriander.

I love to add lots of garlic in my kulambu. Specially if you have those big fat chinese garlic, it taste so good. The garlic gets cooked and absorbs all juices.
