The ingredients needed to make Malvani chicken:
  1. Take For marinate
  2. Get 300 gm boneless chicken
  3. Take 2 teaspoon Kashmiri red chilli powder
  4. Prepare 2 tsp Turmeric powder
  5. Make ready 2 tsp Coriander powder
  6. Make ready 1 tsp jeera(cumin) powder
  7. Prepare to taste Salt
  8. Prepare 2 tbsp Butter
  9. Make ready For Malvani paste
  10. Make ready 3 tbsp oil
  11. Take 2 small Onions Chopped finely
  12. Prepare 1/2 Nutmeg
  13. Take 10 garlic cloves roughly chopped
  14. Get 1 inch ginger chopped roughly
  15. Make ready 5 Black peppercorn
  16. Make ready 1 inch stick Cinnamon
  17. Take 4 Green elaichi(Cardamom)
  18. Get 6-7 Black cloves
  19. Get 2 tsp Ghee (optional)
  20. Take 2 tsp Cumin seeds
  21. Prepare 3 tsp Coriander seeds
  22. Take 3 tsp Sesame seeds
  23. Get 1 cup Dessicated coconut
  24. Prepare For curry
  25. Make ready 2 Bayleaf
  26. Take 2 small Onions Chopped finely
  27. Make ready 3 small Tomatoes Chopped finely
  28. Prepare 3 long green chillies Make slits in the middle
  29. Prepare 3 tbsp Oil
  30. Get 1 tsp Ghee
  31. Make ready To taste Salt

  33. Prepare As needed dessicated coconut
  34. Get 2 tsp Chopped coriander leaves
  35. Take 1/2 lemon

Instructions to make Malvani chicken:
  1. Heat oil in a skillet. Add ghee (optional) Add one half of chopped onions and roast on medium flame for 7-10 mins (NOT burnt or caramelised translucent) Stir occasionally
  2. Add dessicated coconut and spices (nutmeg, cinnamon, cloves, elachi, peppercorn, cumin, coriander and sesame seeds) and stir continuously. Prevent coconut from sticking to surfaces; keep stirring till mix turns brown. Keep flame on medium high. Add little ghee/ oil if needed. This process will take about 5-7 mins
  3. Once dry roasted and browned, set aside to cool. Once cooled, blend this to make a fine paste. Set aside.
  4. In same skillet, heat oil. Add ghee if preferred. Add green chillies, bay leaf and saute for couple of minutes on low-medium flame.
  5. Add other half of onion and saute till translucent/ slightly browned. Add tomato to this and mix on medium-high flame. Stir continuously to ensure tomato does NOT releases juices and cook in it, but turns brown (5-7 minutes)
  6. After this, Malvani paste and mix. Add in the marinated chicken and stir gently. Add salt, chilli powder/ garam masala/ pepper to taste/ water depending on preferred thickness of gravy. Add 2-3 tbsp of water. Close lid and cook on low flame for 20-25 minutes. Stir occasionally.
  7. Take off flame, squeeze lemon, stir gently.
  8. Garnish with coriander leaves and dessicated coconut
  9. Notes:
  10. If using mutton, or chicken with bones, cook the curry in a pressure cooker. Add the gravy with the meat in a cooker. Close lit with whistle and wait for 1 whistle. Cook on low for 20 minutes in cooker. Let it cool completely before taking off the lid.
