The ingredients needed to make Akki Roti Rice Flour Roti:
  1. Take 3 cups rice flour
  2. Take 3 small onions
  3. Make ready 9 tablespoon coconut fresh grated
  4. Prepare 1 carrot grated
  5. Prepare 6 green chilies
  6. Make ready 4 tablespoon Coriander leaves
  7. Take 1 teaspoon cumin seeds
  8. Prepare 1 teaspoon salt
  9. Get 1 teaspoon ginger grated
  10. Get as needed water
  11. Make ready 3 tablespoon oil

It is a quick and easy recipe, which does not require grinding or fermenting any batters. A soft dough of rice flour, perked up with veggies, ginger, green chillies and crushed. This rice flour roti isn't fancy. It's not flavorful or delicious or really anything other than a simple flatbread.

Steps to make Akki Roti Rice Flour Roti:
  1. Wash and chop very finely 1 small onions, 2 green chilies and hand full of coriander leaves. Grate 1/2 carrot and 1/2 teaspoon ginger.
  2. Add 1 cup flour to a large mixing bowl along with 1/3 teaspoon salt, 1/2 teaspoon cumin chopped onions, chilies, Coriander leaves and carrots. Mix everything well. Add 2-3 tablespoon spoon grated coconut.
  3. Pour water little by little and make a soft dough. The dough must be smooth and moist divide the dough to 4 equal balls. Roll to smooth. Keep the bowl covered to prevent drying up.
  4. You can Akki roti on greased banana leaf, moist handkerchief, foil, parchment paper or directly using kadai with your folded four finger
  5. Place the ball on moist cloth, foil or greased banana leaf
  6. Begin to spread it lightly with your fingers to make a round roti if the edges of Akki roti get cracked then dip your fingers in water and join the cracks. Then continue to spread it.
  7. It can be make thick or thin to suit your taste if making thick make three finger size holes with one and half inch apart in between.
  8. Heat greased tawa or kadai on a medium high flame lift the banana leaf or foil reverse it on hot tawa gently peel off the leaf or foil
  9. When brown spots appear the akki roti is done, do not over cook it may turn hard. while you toast the Akki roti make other one on the leaf or foil transfer to the tawa after first one is done
  10. If you ate making directly on tawa then you will need two tawas to use them alternatively or cool the tawa completely by pouring cold water and then spread the next roti.
