  1. Prepare Half cucumber

  4. Make ready 600 g good quality tomatoes

  6. Take 1 spring onion
  7. Get 40 g bread (old bread is perfect!)
  8. Make ready Good quality olive oil
  9. Get Few slices of chorizo
  10. Prepare leaves Few Basil
  11. Get Pinch salt
  12. Prepare 1 tbsp White wine vinegar

Steps to make Chorizo Gazpacho:
  1. Chop all the vegetables and the bread, and put into a bowl. Season well with salt and pepper, olive oil and the vinegar and leave to marinade for at least 30 minutes (the more the better though!)
  2. Put everything into a blender and whiz until smooth. Then adjust consistency and seasoning to your liking and chill in the fridge.
  3. Serve really cold with a few slices of chorizo (or without if you want it veggie!) and 2 leaves of basil.
