The ingredients needed to make Gnocchi With Chorizo:
  1. Take 480 g gnocchi,
  2. Take 80 g reduced fat chorizo, cut into tiny cubes,
  3. Prepare 1 small red onion, chopped finely,
  4. Prepare 1 large clove garlic, chopped finely,
  5. Get 4 heaped tbsp tomato & basil pasta sauce,
  6. Make ready 1/2 tsp dried parsley,
  7. Make ready Spray cooking oil (sunflower or vegetable),
  8. Prepare Salt and pepper to season

Instructions to make Gnocchi With Chorizo:
  1. Heat a large pan up and spray in some oil. Once hot add the onions. Fry gently over a medium heat until the onion just starts to turn translucent. Boil some salted water in a saucepan and add the gnocchi. Cook according to the packet instructions.
  2. Add in the chorizo and garlic with the onions. Season with salt and pepper. Stir to combine the ingredients. Fry for about three minutes.
  3. Drain off the gnocchi and then add it in with the ingredients. Toss everything together. Add the dried parsley and tomato and basil pasta sauce. Stir to combine.
  4. Cook for a couple of minutes then serve up. Grate over some cheese and enjoy! :)
