The ingredients needed to make My Chicken, Chorizo garlic Roast:
  1. Take 2 Chicken breasts cut up into bite size
  2. Get 200 g smoked Bacon Lardons
  3. Make ready 1 Handful mixed veg ie Broccoli,onion,carrots,courgettes
  4. Prepare 5 Garlic cloves soaked in Virgin olive oily Tomatoes
  5. Prepare 200 g Chorizo chopped up
  6. Take 10 Cherry Tomatoes
  7. Get Little sweet Peppers
  8. Get 1 onion cut into 1 inch pieces
  9. Make ready 2 squeezes a lemon
  10. Get 1 handful sundried Tomatoes
  11. Make ready 1 tbls Artichoke quaters in oil and a little of the oil
  12. Take 1 tsp dried Basil

In a bowl, place the potatoes and garlic. Right out of the oven, drizzle the chicken and vegetables with the cooking juices. The addition of chorizo to this roast chicken stuffing is something I have been doing for the past few months, it brings an extra dimension to the stuffing and gently flavours the chicken too.   1. Ingredients
  2. Heat up the oil with the garlic in it.and fry for 1 minute add the chicken pieces.
  3. Then add the onion
  4. Mix in then add the bacon bits and fry for 5 minutes
  5. Then add the chorizo and mix in fry for 2 minutes.
  6. In an oven dis add the veg except the fresh cut Sweet peppers and Tomatoes
  7. Mix and fry for 2 minutes add lots of black pepper.
  8. Add all this to a greased oven dish and add the tomatoes and fresh peppers. Squeeze a bit of lemon all over.
  9. Cook in a preheated oven medium - high for 20 minutes.
  10. Add the sundried Tomatoes and the Artichoke with some of the olive oil.
  11. Lastly sprinkle the Basil over the top then add it to the oven.after 20 minutes serve hot
