Steps to make Chorizo Beans on Toast:
  1. Chop chorizo into rounds and fry on olive oil.
  2. Add onion and garlic and fry until translucent.
  3. Add tomato purée and fry for a few minutes.
  4. Add butter beans and fry until the skins begin to colour/burst.
  5. Add tin of tomatoes, lemon juice, salt and pepper and sugar. Cook on high heat until most of the liquid has gone. Check for seasoning. Add fresh chopped parsley.
  6. Whilst the sauce is cooking, toast thick slices of bread on a griddle pan until they crisp up.
  7. Pile the sauce on top of the toast and crumble over feta.
