The ingredients needed to make Stir Fried Courgettes:
  1. Prepare 2 medium Courgettes, in spiral
  2. Get to taste Salt
  3. Make ready to taste Ground black pepper
  4. Make ready 3 garlic cloves, thinly sliced
  5. Take 2-3 tbsp olive oil
  6. Take 1/2 tsp garlic powder
  7. Take 1 tbsp butter
  8. Get pinch fresh thyme leaves

Serve as a side dish with any meal, or under Bolognese or pasta sauce. Take care to not brown the vegetables. Spiralise or julienne the courgettes, or cut them into very fine strips with a peeler to make 'courgetti'. Heat the coconut oil in a large wok or pan.

Steps to make Stir Fried Courgettes:
  1. Heat the olive oil in a wok over medium heat.
  2. Add in the garlic and gently fry for about 30 seconds to a minute. Don't let the garlic burn.
  3. Add the courgettes, thyme leaves, butter and garlic powder and fry for 6-8 minutes. Cook less if you want them less mushy, I did these in mind for toddler so made it really soft.
  4. Season with salt and pepper.
  5. Serve hot.

Spiralise or julienne the courgettes, or cut them into very fine strips with a peeler to make 'courgetti'. Heat the coconut oil in a large wok or pan. Toss the slices in a plastic bag with the flour, well seasoned. Drain on kitchen paper, serve hot. Courgette and red pepper stir fry recipe.
