The ingredients needed to make Courgette muffins:
  1. Take 1/2 courgette
  2. Prepare 1 egg
  3. Take 100 g cheese (we like strong cheese for flavour)
  4. Get 50 ml oil
  5. Take 200 ml milk
  6. Take 1/4 tsp black pepper
  7. Take 225 g self raising flour
  8. Get Optional
  9. Get Ham
  10. Get Tomatoes
  11. Prepare Spring onion
  12. Get Spinach

Steps to make Courgette muffins:
  1. Grate the courgette and cheese and put in a bowl together with all of the ingredients but the flour (I used 4 slices of ham cut into pieces for this batch). Mix well with a fork.
  2. Add the flour and mix until everything has just combined (make sure not to over work it as the muffins might turn out a bit chewy then).
  3. Spoon the batter into 10-12 muffin cases and bake in the oven at 200 degrees for 15-20 minutes. Enjoy!
