The ingredients needed to make String bean and courgette curry:
  1. Get 1 Courgette
  2. Prepare 75 g String beans
  3. Take 1 Onion
  4. Make ready 1 tin plum tomatoes
  5. Get 2 tbsp oil
  6. Get 3 tsp garlic puree
  7. Get Tin coconut milk
  8. Prepare 8 curry leaves
  9. Prepare 3 tsp ginger puree
  10. Get 2 tsp sunflower seeds
  11. Get 1 tsp tumeric
  12. Make ready 1 tsp cumin
  13. Take 1 tsp ground coriander
  14. Make ready 1 tsp garam masala
  15. Get 1/2 tsp dried chilli flakes or fresh chilli finely chopped
  16. Make ready 1 tbsp lime juice
  17. Get 1/2 tsp coriander seeds

Cook gently until the prawns change from grey to pink and the courgettes are tender, but not too soft. Courgettes originated in Italy and were popular in the Mediterranean region hundreds of years before they became popular in the rest of the western world. Courgettes are a good source of vitamin C and a source of folate, niacin, vitamin E and riboflavin and contain a dietary significant amount of potassium. Instructions to make String bean and courgette curry:
  1. Add onion and oil to pan. Cook until slightly softened then add courgette and sunflower seeds. Cook for a further few minutes
  2. Add garlic, chilli and all of the spices. Cook for 1-2 minutes, taking care not to let the spices burn.
  3. Add string beans, tinned tomatoes and lime juice and cook for 10-15 minutes until all the veg is tender.
  4. Add coconut milk and cook for a further 5 minutes, stirring occasionally.

Add the tomatoes, tomato purée, water and lemon juice, then stir together. Taste the curry and add some salt or pepper if you think it needs it.
