  1. Heat the oven at 180° C. Wash and peel the courgettes, then chop them into small cubes.
  2. Finely chop the onion and add it with the butter on a medium heat pan. Cook until the onion is soft.
  3. Add the chopped courgettes and the fresh thyme and simmer on low heat for approximately 40 min or until they are soft and all the liquid evaporated.Add chopped garlic and cook for another 5 min.
  4. In a bowl mix the eggs with the grated cheese, grated parmesan, salt and pepper.
  5. When the courgettes are ready add the egg mixture on top and cook on top of the stove for 5 min, add the fresh parsley, then finish in the oven for another 25 min.
