Instructions to make Keto Courgette patties:
  1. Grate the courgettes and season with salt. Leave on side to allow water to drain.
  2. Using paper towels squeeze the grated courgettes until there is no more water coming out.
  3. Grate the feta cheese and add it to a large bowl, add all the remainingingredients inculding courgettes and mix well.
  4. Heat a medium pan with 3 tablespoons of olive oil. Using wet hands form small patties and add them into the oil.
  5. Cook them until they are nice and brown, using a spatula turn them and cook on the other side for another 5 min.
  6. Remove from pan into a plate covered with paper towels to remove any extra fat.
  7. Best served cooled with some greek yogurt and fresh herbs. Enjoy!
