The ingredients needed to make Prawn and courgette spaghetti:
  1. Get 2 courgettes
  2. Make ready 250 grams raw peeled prawns (cooked also work)
  3. Get 300 grams spaghetti
  4. Make ready 1 garlic clove peeled and finely sliced
  5. Get half a lemon
  6. Take parmesan cheese

Stir in the prawns, cayenne and lemon zest and juice; season. In a large saucepan, boil some water for the pasta and add spaghetti when ready In the meantime, drizzle some olive oil and chopped garlic in a large frying pan. Fry the garlic, until softened and add the courgette to fry down and sprinkle a few chilli flakes. Add the prawns and salmon to the frying pan and add a glass of white wine.

Instructions to make Prawn and courgette spaghetti:
  1. Cut courgettes in half lengthways, then slice
  2. Put some oil in frying pan and cook courgettes until soft
  3. In meantime cook spaghetti as per packet instructions. We used c.300 grams which would serve 4 adults
  4. Add the sliced garlic to courgettes and gently fry
  5. Once courgettes have softened and starting to brown, add prawns. If raw, cook until pink. Careful not to overcook. Once cooked, remove from heat and squeeze lemon
  6. Drain spaghetti when cooked and add to pan with prawns and courgettes. Stir gently. Season.
  7. Serve with sprinkle of parmesan cheese if desired.
  8. Tips: add chilli for a bit more bang. I cooked for my kids so kept it simple. Enjoy.
