The ingredients needed to make Sweet & Sour Juicy Chicken Breasts:
  1. Prepare 3-4 Good Quality Chicken Breast Fillets *skin removed, about 500 to 600g
  2. Make ready Salt a few pinches
  3. Take 1-2 tablespoons Sake
  4. Take 1 clove Garlic *grated
  5. Prepare Potato Starch Flour as required
  6. Prepare 2 tablespoons Canola Oil OR Vegetable Oil
  7. Take 1 Spring Onion *finely chopped
  8. Get Toasted Sesame Seeds
  9. Prepare <Sauce Ingredients>
  10. Take 2 tablespoons Soy Sauce
  11. Prepare 1 tablespoon Sugar
  12. Prepare 1 tablespoon Mirin
  13. Prepare 1-2 tablespoons Rice Vinegar

Steps to make Sweet & Sour Juicy Chicken Breasts:
  1. Slice Chicken Breast Fillets so that all pieces are about same thickness. Relatively thin pieces are recommended because they can cook quickly. Cut to smaller pieces if you like or you might prefer large pieces.
  2. Sprinkle with the Salt evenly, add Sake and grated Garlic and massage, then let them marinated for 10 minutes.
  3. Combine all the sauce ingredients in a small bowl and mix well.
  4. Coat the Chicken pieces with Potato Starch Flour. This layer of flour will turn to jelly-like when combined with the sauce.
  5. Heat Oil in a frying pan over a high heat, and cook Chicken until slightly browned. It won’t take long to cook.
  6. When Chicken are cooked, reduce heat to medium, add the sauce. As the sauce thickens, turn the Chicken pieces over and combine both sides with the sauce.
  7. Sprinkle chopped Spring Onions and Sesame Seeds on top and serve.
