The ingredients needed to make Lasagne Enchilada:
  1. Take 250 grams beef mince
  2. Make ready 1 stock beef stock
  3. Take 1 small onion
  4. Take 1 clove garlic
  5. Make ready 230 grams chopped tomatoes
  6. Prepare 1 packages enchilada spice mix
  7. Get 1 each carrot
  8. Make ready 1 tbsp tomato puree
  9. Prepare 4 each tortilla
  10. Prepare 300 ml mornay sauce
  11. Get 200 grams Cheddar
  12. Make ready 1 salt and pepper to season

Instructions to make Lasagne Enchilada:
  1. brown mince in a pan
  2. add beef stock to mince
  3. add diced onions, crushed garlic, grated carrot and stir until the onions are clear
  4. add chopped tomatoes, tomato puree and enchilada mix. allow to simmer for 15 minutes to reduce, stiring occasionally
  5. warm tortillas in the microwave for 20 secs to soften
  6. heat (i make my own) the mornay sauce
  7. spoon the mince on one side of the tortilla and roll. place into a dish and repeat until you run out of space
  8. spoon any leftover mince on the top (don't worry if you don't have any)
  9. pour over the mornay and top with as much cheese as you like
  10. heat in oven at 220°c or grill until golden and crispy
